Shrimp Boil Bliss: Healthy Louisiana BBQ Shrimp Recipe
A delightful and healthy take on the classic Louisiana shrimp boil, featuring succulent shrimp, vibrant vegetables, and a flavorful seasoning blend.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 cups corn on the cob, cut into thirds
- 2 cups baby potatoes, halved
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 lemon, cut into wedges
- Fresh parsley for garnish
Instructions
- In a large pot, bring 4 quarts of water to a boil. Add the baby potatoes and cook for 10 minutes.
- Add the corn to the pot and continue boiling for another 5-7 minutes until potatoes are tender.
- In a small bowl, mix together the olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Drain the potatoes and corn, and return them to the pot. Stir in the shrimp and seasoning mixture, mixing well to coat.
- Cover the pot and cook on medium heat for about 5-7 minutes, or until the shrimp are pink and cooked through.
- Remove from heat, garnish with lemon wedges and fresh parsley, and serve immediately.
Tips
- For a spicier kick, add additional cayenne pepper to the seasoning mix.
- Feel free to include other vegetables like bell peppers or sausage for added flavor.
