A nutritious and delicious one-pan dish that combines cheesy beef with fresh vegetables and pasta for a satisfying meal.
Ingredients
- 1 pound ground beef
- 2 cups uncooked pasta
- 1 cup diced bell peppers
- 1 cup chopped spinach
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until softened.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink.
- Stir in the diced bell peppers and chopped spinach, cooking until the vegetables are tender.
- Add the uncooked pasta, beef broth, Italian seasoning, salt, and pepper to the skillet. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, or until the pasta is cooked through and has absorbed most of the liquid.
- Remove from heat and stir in the shredded mozzarella cheese until melted and creamy.
