Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced
  • 1/4 cup Greek yogurt for topping

Instructions

  1. Preheat the oven to 175u00b0C (350u00b0F) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, mix together the almond flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients and mix until fully incorporated.
  5. Fold in the blueberries gently, being careful not to crush them.
  6. Pour half of the brownie batter into the prepared baking pan and spread evenly.
  7. Layer the sliced strawberries on top of the brownie batter, then pour the remaining brownie batter over the strawberries, smoothing it out.

  9. Let cool for at least 15 minutes before slicing into squares.
