Healthy Red, White & Blue Brownies: A Guilt-Free Memorial Day Treat
Delicious and nutritious brownies layered with fresh berries, perfect for celebrating Memorial Day without the guilt.
Ingredients
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup fresh blueberries
- 1 cup fresh strawberries, sliced
- 1/4 cup Greek yogurt for topping
Instructions
- Preheat the oven to 175u00b0C (350u00b0F) and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, mix together the almond flour, cocoa powder, baking soda, and salt.
- In another bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract until smooth.
- Combine the wet ingredients with the dry ingredients and mix until fully incorporated.
- Fold in the blueberries gently, being careful not to crush them.
- Pour half of the brownie batter into the prepared baking pan and spread evenly.
- Layer the sliced strawberries on top of the brownie batter, then pour the remaining brownie batter over the strawberries, smoothing it out.
- Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for at least 15 minutes before slicing into squares.
- Serve topped with a dollop of Greek yogurt and additional berries if desired.
