Ingredients

  • 1 pound ground beef
  • 2 cups uncooked pasta
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until softened.
  2. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink.
  3. Stir in the diced bell peppers and chopped spinach, cooking until the vegetables are tender.
  4. Add the uncooked pasta, beef broth, Italian seasoning, salt, and pepper to the skillet. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the pasta is cooked through and has absorbed most of the liquid.
  6. Remove from heat and stir in the shredded mozzarella cheese until melted and creamy.
