Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 cups corn on the cob, cut into thirds
  • 2 cups baby potatoes, halved
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 lemon, cut into wedges
  • Fresh parsley for garnish

Instructions

  1. In a large pot, bring 4 quarts of water to a boil. Add the baby potatoes and cook for 10 minutes.
  2. Add the corn to the pot and continue boiling for another 5-7 minutes until potatoes are tender.
  3. In a small bowl, mix together the olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Drain the potatoes and corn, and return them to the pot. Stir in the shrimp and seasoning mixture, mixing well to coat.
  5. Cover the pot and cook on medium heat for about 5-7 minutes, or until the shrimp are pink and cooked through.
  6. Remove from heat, garnish with lemon wedges and fresh parsley, and serve immediately.

Tips

  • For a spicier kick, add additional cayenne pepper to the seasoning mix.
  • Feel free to include other vegetables like bell peppers or sausage for added flavor.
